Rosehip Syrup Immune Boost
I love the Autumn and it's a great time to forage for Rosehips and late Summer fruits like Blackberries and Damsons which are packed with Vit C and great for the immune system. Here is a recipe for Rosehip Syrup.
Collect a bag full of Rosehips and rinse. Cover with water and bring to the boil, simmer for 20 minutes or until soft. Add more water if necessary. Mash and strain to separate the juice from the pulp. Add a spoonful or two of good quality honey to taste. Bottle and keep refridgerated. Should keep for a week or two but it probably won't last that long, ha! Make more.
I added my syrup to locally foraged blackberries and damsons (stewed) and have made several deserts with it, delicious and so good for you.
